5 Hearty (and Healthy!) Soups to Warm You Up This Winter

1. Vegetable Cabbage Soup

If you could stand to eat more veggies, this healthful soup will make that admirable goal feel less dreaded. The good news is, this vegetable cabbage soup recipe is infinitely adaptable—you can swap out just about any veggie for an equivalent one. Don’t like celery? Chop up some leeks! 

Over medium heat, stir together some olive oil, chopped onions, celery stalks and carrots, and season with a little bit of chili powder, pinched red pepper flakes, chopped parsley, kosher salt and freshly ground black pepper. Fortify your soup with a can of white beans, minced garlic cloves, thyme leaves, vegetable broth, fire-roasted tomatoes and, of course, one head of cabbage.

2. Creamy Broccoli Cheddar Soup

Instead of melting butter, we recommend using a stick of margarine for a low-fat rendition of this popular soup. Once this dairy-free substitute is melted in a large pot, throw in some diced yellow onion,  minced garlic cloves and all-purpose flour until your mixture is golden—upon which you may incorporate a few cups of vegetable broth. Bring to a boil, and add a couple of cups of Greek yogurt instead of half-and-half creamer for a lighter, tangier taste.

Cut the heat, and toss in some broccoli florets until the soup catches a light green color. Purée the soup in a blender before serving with kosher salt and pepper. And finally, garnish with some broccoli heads. Okay, okay: you can whisk in some grated white cheddar, too.

3. Chicken Avocado Lime Soup

Who says a high-fat diet has to be a bad thing? Everyone’s favorite healthy fat, the avocado, takes this citrusy tortilla soup to new heights. To whip up this recipe, you'll need some chicken breasts, olive oil, chopped green onions, minced jalapeños (seeded, if you can’t take the heat), minced garlic cloves, chopped cilantro, diced Roma tomatoes, ground cumin, black pepper, (three!) diced avocados, low-sodium chicken broth and fresh lime juice.

We humbly suggest serving this soup with some grain-free tortilla chips to dunk in some Monterey jack cheese and Greek yogurt.

4. Gluten-Free Tomato Soup

Regardless of how you say “toe-may-toe/toe-mah-toe,” you’ll find that just about anyone can appreciate a gluten-free tomato soup to go with their grilled cheeses once in a while. That’s right—gluten-free dishes aren’t just for those with Celiac’s disease or wheat allergies. With benefits such as eliminating processed foods from your diet and improving your cholesterol levels, gluten-free soups are an easy way to ease into a more healthful lifestyle.

Curl up by the fireplace with a bowl of this creamy goodness made with just olive oil, diced tomatoes, one diced potato (yes, you read that correctly), gluten-free vegetable stock, dried parsley, sugar, salt and pepper. If you haven’t guessed, the potato helps give the soup a thicker texture without the need for heavy whipping cream!

5. Thai Chicken Coconut Soup

If you’re deadset on kicking off 2020 on a keto diet, don’t worry: we’ve got you covered, too. For a soup that reminds you of delectable curry, stir together some olive oil, minced ginger, chopped shiitake mushrooms, low-sodium chicken broth, coconut milk, fish sauce, boneless skinless chicken thighs and lime juice.

For some pizzazz, we recommend serving a bowl garnished with cilantro leaves and chili oil.
